BANANA BURGERS

A fun plant based recipe to try.

You don’t have to be vegan or vegetarian to enjoy these delights!

Amaze your friends and family with burgers sans meat! You won’t believe how tasty they are.

INGREDIENTS:

  1. 1 banana
  2. 1.5 cup of shredded carrots 
  3. 1 cup of chopped tofu
  4. 1 cup of steamed cauliflower
  5. 1 cup of chopped mushrooms
  6. 1 cup of black beans
  7. 3 tbsp broccoli buds (yes the buds only)
  8. 2 tsp garlic powder
  9. 2 tsp black pepper
  10. 2 tsp onion powder
  11. 1 avocado (for topping)

DIRECTIONS

1.   Steam cauliflower 

Steam the cauliflower for about 15 minutes.

2.   Blend ingredients 

Combine steamed cauliflower, tofu, and chia seeds in the blender or food processor and blend until smooth.

3.  Mix other ingredients

Mix mushrooms, corn, and seasonings together in a large bowl. Mash the black beans and stir them in to the bowl. Mash the banana and stir it into the bowl.

4.   Combine both mixtures

Pour the cauliflower-tofu mixture in and stir everything together.

5.   Bake burgers

Very lightly coat a baking sheet with oil and form burger shapes on the sheet. Bake at 405 degrees for about 40 minutes or until they hold together firmly. I then put them on the grill for 3-5 minutes, but that step is not necessary.

6.   Add Toppings

Top with avocado, hot sauce, bananas and any other toppings!  Feeling unsure about the bananas? Trust me!
